3 Veggies You Should Be Cooking with Right Now

Fall is the perfect time to enjoy vegetables that are full of flavor and packed with nutrition. Right now, chard, broccoli, and fennel are peaking in our fields! You might already know and love some of these fall favorites. If any of them are new to you, this season is the perfect time to give them a try! Chard

Meet the leafy green you didnโ€™t know you needed this fall: chard! Rainbow Swiss chard is used as a salad green and a leaf vegetable, making it a multifaceted ingredient in the kitchen. It can be used both raw and cooked; cooking will give the leaves a milder flavor.

How to use chard:

โœจ Sautรฉ with olive oil and garlic for a simple side

๐Ÿฅฃ Stir it in hearty soups + stews

๐Ÿฅฌ Add to frittatas or savory tarts

๐ŸŒฏ Use the leaves as a wrap around grains + roasted veggies

๐Ÿ Add into pasta or risotto


Broccoli

We know this is a favorite veggie for many folks and are so excited to be including it in CSA shares this week! Crisp, sweet, and full of flavor - itโ€™s one of our beloved cooler-weather crops, and itโ€™s thriving in the fields right now!

How to use broccoli:

๐Ÿง„ Roast it with olive oil and garlic

๐Ÿฅฆ Steam it for a simple, healthy side

๐Ÿœ Stir-fry it with soy sauce and other veggies

๐Ÿ Toss in pasta - great with garlic and cheese!

๐Ÿณ Add to eggs - perfect in omelets or frittatas


Fennel

Fennel has a very mild anise or licorice flavor that can be enhanced or sweetened depending on how it is cooked (or not cooked). When diced and sauteed with onions as one of the first steps when making a soup or stew, fennel becomes very sweet.

How to use fennel:

๐Ÿฅ— Slice it raw into salads (pairs great with apples!)

๐Ÿ”ฅ Roast it with olive oil until beautifully caramelized

๐Ÿฒ Add it in soups for extra flavor depth

๐Ÿ With pasta โ€“ pairs great with sausage or tomato sauce

๐Ÿ• Thinly slice it and add as a pizza topping with herbs

Fun fact: Donโ€™t toss those fennel fronds! Theyโ€™re perfect as a fresh, herbal garnish - like parsley with a hint of anise. Sprinkle them on salads, soups, or even mix into homemade pesto for a bright, unexpected flavor boost!
