Red Norland Potatoes
Red potatoes have a subtly sweet and earthy flavor with a waxy texture, often described as slightly firmer than other potato varieties, making them ideal for salads, soups, and roasting due to their ability to hold their shape well during cooking. They have a thin red skin and creamy white flesh inside.
Best used for: In salads, soups, and roasting.
Yukon Gold Potatoes
Gold potatoes have an excellent smooth texture with a buttery flavor.
Best used for: Baked and mashed potatoes!
Upstate Abundance Potatoes
Row 7 Variety
Upstate Abundance was developed at Cornell University. It is known for its small, golf-ball sized tubers with creamy white flesh, high yield, and resistance to diseases like late blight. It is a "creamer" potato with a buttery, nutty flavor. Due to its size and texture, it makes a great smashed potato.
Best used for: Roasting or smashing
Purple Sun Potatoes
Purple Sun potatoes have a dark purple skin and a yellow interior. They have a smooth and slightly waxy texture. Their flavor can be described as earthy and slightly nutty.
Best used for: Roasting, boiling, or frying
