Get Creative with Winter Veg!
Eating seasonally and locally in the Mid-Atlantic winter means you’re enjoying a lot of sweet potatoes, carrots, and cabbage this time of year. This is a great opportunity to get creative with your produce and try new innovative ways to cook with everything! Running out of ideas to make with your winter veg? We’re here to help! Here are a few out-of-the-box ways to cook some of the popular items in shares this time of the year.
Carrots
Making carrot “lox” is a fun and vegan/vegetarian friendly way to add some extra veggies to your brunch, especially in this recipe where you top them over beet pancakes! Another creative way to use carrots is in hummus or salad dressings!
Have a sweet tooth? They’re also great for baking - try shredding them and making this carrot cake muffin recipe! Fritters are another great way to enjoy carrots. Just grate them and mix with a few other ingredients and you have a simple and delicious meal!
Potatoes
Need a new dish other than the usual mashed or roasted potatoes? There are so many fun meals you can make with them like galettes, waffles, or muffin tin stacks! Potatoes are also the perfect veggie to add to your morning meal – try them in breakfast tacos or a frittata!
Radishes
Sure, you can just slice up radishes as a topping, but have you tried them roasted or pickled?! These are two ways to give them a little different flavor and texture. Pickled radishes go great on tacos, sandwiches, or salads. You can also make smashed radishes for a unique side dish!
Cabbage
We love that cabbage is such a versatile veggie! We recommend trying the leaves as a wrap or chopping cabbage up and adding to rice paper roll filling. Another great use for cabbage is making sauerkraut and adding it to sandwiches or bowl meals!
Sweet Potatoes
Sweet potatoes are great for any meal of the day! Turn them into fries for a delicious snack, side, or kid-friendly meal addition. Stuffed sweet potatoes are perfect for topping with other veggies, grains, or a protein for an entree! Sweet potatoes are also delicious in mac and cheese.
