One question we hear from CSA members all the time is: "How can I best preserve my veggies?" One of the best ways is blanching. Think of it as pressing the pause button on your vegetables before freezing them.
Blanching is a process where vegetables are briefly boiled, then transferred to ice water. This deactivates natural enzymes that continue breaking down vegetables after harvest. If left active, these enzymes can cause frozen vegetables to lose their color, flavor, texture, and nutrients over time.
Wondering which vegetables you can blanch and freeze? Green beans, broccoli, cauliflower, carrots, sweet corn, asparagus, spinach, kale, and Swiss chard are all great options!
